Food on Fridays: Pumpkin Pancakes

For the Food on Fridays carnival, any post remotely related to food is welcome—though we love to try new dishes, your post doesn’t have to be a recipe. We’re pretty relaxed over here, and stories and photos are as welcome as menus and recipes. When your Food on Fridays contribution is ready, just grab the button to include with your post. It ties us together visually. Then fill in the boxes of this linky tool to join the fun!

Food on Fridays with Ann

Not long ago, Frugal in Florida linked us to a recipe for grain-free pumpkin pancakes. Intrigued, I tried making them this week. Minimal ingredients, easy instructions.

They smelled like little pumpkin pies cooking on the griddle.

I ate them with sliced bananas and syrup, as recommended, and while the pancakes didn’t rock my world, they were tasty. And I was grateful to have a grain-free option for breakfast, to add variety.

I’m amazed there is a recipe for grain-free!
Thanks for your honesty Ann. We are all trying things together and I’m excited to try this recipe. Thanks for posting and being adventerous without grain. I went grain free for a month with a group and it was a month heavy on veggies and fruit. When eating processed food is not an option I still draw a blank.

If you can eat sugar or Stevia, I think a little sweetness might make these even more appealing. I poured syrup on theme, so I didn’t feel like I needed to add sweetener to the batter. Now, however, I think I would toss in just a little something, to pull it together.

Well this is interesting and as much as I like pumpkin, I am not sure I would enjoy the pan cakes grain free. Sorry, but I will pass. I did go to her site, and watch her cook changing from her flat pan to her skillet.

The real test is whether or not pumpkin pie boy liked them!
