Food on Fridays with Ann
Not long ago, Frugal in Florida linked us to a recipe for grain-free pumpkin pancakes. Intrigued, I tried making them this week. Minimal ingredients, easy instructions.
They smelled like little pumpkin pies cooking on the griddle.
I ate them with sliced bananas and syrup, as recommended, and while the pancakes didn’t rock my world, they were tasty. And I was grateful to have a grain-free option for breakfast, to add variety.

I’m amazed there is a recipe for grain-free!
Thanks for your honesty Ann. We are all trying things together and I’m excited to try this recipe. Thanks for posting and being adventerous without grain. I went grain free for a month with a group and it was a month heavy on veggies and fruit. When eating processed food is not an option I still draw a blank.
If you can eat sugar or Stevia, I think a little sweetness might make these even more appealing. I poured syrup on theme, so I didn’t feel like I needed to add sweetener to the batter. Now, however, I think I would toss in just a little something, to pull it together.
Well this is interesting and as much as I like pumpkin, I am not sure I would enjoy the pan cakes grain free. Sorry, but I will pass. I did go to her site, and watch her cook changing from her flat pan to her skillet.
The real test is whether or not pumpkin pie boy liked them!
