Traveling to the Festival of Faith and Writing with Charity proved to amp up the fun. It also added interesting meal solutions.On our way to Grand Rapids, we stopped in South Bend to eat at The Mark Dine and Tap because that’s what turned up when she Googled vegetarian/vegan restaurants in the area. She’s learning how to eat out as a vegan. Though my diet is not as restricted as Charity’s, I have been shifting to plant-based meals and appreciated the well-marked options on their menu.I ordered the Grilled Portobella Sandwich, with sprouts, tomato, lettuce and red pepper, served with a side of sweet potato fries.Delicious.
Satisfying.
Fun.Four stars; highly recommended.

I’m sorry I’ve been missing Food on Fridays for the last couple weeks – it’s been a busy time! This week I’ve shared a Red Velvet Cake recipe that is so easy it’s almost like a cake mix.
That Portabello Sandwich looks delicious. I can only imagine how challenging it is dining out as a vegan! Thank you for hosting, and have a lovely weekend!
I like easy cakes! I’m making some cupcakes for my daughter’s birthday gathering tonight. Perhaps I should give it a try?
I’m not vegan–Charity is not only vegan but also avoiding gluten and dairy. And that is indeed a challenge. I’m mostly vegetarian, which is much easier.
This week I’m sharing a cake recipe from my new local food/cooking blog. There’s a link in the post to a fabulous buttercream icing which isn’t difficult to make.
Boy does that Portabello sandwich look yummy! I may add P. mushrooms to my grocery list. The sweet potato fries look good, too. I’ve made them as baked fries which didn’t go over too well with my kids. I bet if I fried them, the kids would love them. After all, who doesn’t love fried food?

Thanks for hosting! I shared my Marinara #1, part of my mission to create several tasty no can marinara sauces. As a cycling/running household, we eat a lot of pasta! I couldn’t find any recipes that didn’t used canned tomato something, so this is step one of my quest to make my own no-can marinara without a ton of effort. Enjoy! (#20)
You are wise to google ahead for restaurants that will fill the need. Your sweet potatoe fries interest me. Sweet potatoes are so healty too and filling.
Mmmmm… reminds me of the Portobello at North in Tucson. The glaze peeking out from the bun is lovely!
And my curry/veggie/rice dish – vegan and gluten free and all the other things I am avoiding – was amazing, too. I would definitely recommend the Mark Dine and Tap if anyone is traveling through South Bend, Ind.
